Fruited Spinach Salad*
with Raspberry Dressing*

Chocolate Strawberry Pie*

The simple version can be ready in as little as 10 minutes; less than 30 minutes with all the options.

Recipes supplied for starred (*) items.
Serves 4.

Chocolate Strawberry Pie*
Serves 6

Ingredients:

6 Ounce Chocolate Crumb Pie Crust
1 Box (4 Serving Size) Instant Chocolate Pudding Mix
1 1/2 Cups Cold Milk
16 Ounces Fresh Strawberries
1 Cup Whipped Topping
Chocolate Syrup, optional

Directions:

Wash Strawberries and remove green tops.
Set aside.
In a Medium mixing bowl, combine Pudding Mix and Milk.
Stir briskly for Two minutes.
Immediately pour into Pie Crust.
Spread Pudding to cover the bottom of the Pie Crust.
Top with Strawberries, placing them point up.
Cover with Plastic wrap and chill in refrigerator until ready to serve.

Right before serving, cut into 6 pieces and top with Whipped Topping.
Drizzle with Chocolate Syrup if desired.

Fruited Spinach Salad*
with Raspberry Dressing*

Note:
For a main dish salad, cook and cool pasta first, then build your salad.
Divide optional pasta and cheese onto salad plates before drizzling dressing.

Ingredients:

6 ounce cello bag baby spinach, washed and dried
24 stalks fresh asparagus
1 1/2 tablespoons water
1/4 teaspoon salt
1 pint fresh raspberries, divided
1 cup strawberry or apple juice
1/4 cup white vinegar
1/4 cup extra virgin olive oil
1/2 cup pecan pieces
2 cups cooked and cooled rotini pasta, optional
2 cups cubed mozzarella cheese, optional

Directions:

Divide spinach evenly onto serving plates.
Set aside.
Place asparagus, water, and salt in microwave safe container.
Cover with plastic wrap, turning back one corner to vent.
Microwave at full power for 1 minute.
Drain and set aside.
Set aside 1/2 of the raspberries.
In a small bowl, crush remaining raspberries with the back of a fork
or potato masher.
Add vinegar and olive oil and continue to crush berries.
Add strawberry or apple juice.
Mix well.
Set aside.

To serve, top spinach with steamed asparagus, remaining raspberries, and pecan pieces.
Stir Raspberry dressing well, then drizzle over the top.
